<p>帝国ホテルのレストランというと地下に何軒もあるので、てっきり嘉門さんも地下だと思っていたら本館17階にお店を構えていました。<br />

<p>メインのカウンターがお出ましとなります。今回はその両脇に広がっている個別のテーブルに通されました。個別のテーブルでは、<strong>最大6名まで着席できるサテライトの鉄板焼カウンターとなっていて、サテライトテーブルでも目の前で専属のシェフが焼いてくれるシステムとなっていました。</strong><br />

<p>サテライトテーブルは窓に近いため、外の景色も見えます。今回着席したテーブルは銀座側の景色が堪能できました。<br />

<h2>シェフの特選メニュー「嘉門」</h2>
<p>今回は夏の食材「鮑（あわび）」の魅力を堪能できる特選メニュー「嘉門」をオーダーします。こちらは2019年7月1日から9月30日までの期間限定メニューになります。</p>
<p>一皿目はアミューズブーシュ。お鉢の中はオニオンフライ。右の揚げ物は牛肉とコシヒカリのライスボールとなっています。○○フライというとポテトフライしか想像できなかった<strong>ぷくお</strong>ですが、<strong>オニオンフライは食感も軽く玉ねぎの甘さも出ていて家で作ってみたくなる一品</strong>でした。<br />

<p>家で作れるかな？と思ったのはオニオンフライまで。ライスボールになると早くも家では作れないような、濃厚なお肉の旨みとコシヒカリの絶妙な炊き加減、そして程よい厚みの皮で、何個も食べたくなってしまいます。<br />

<p>鮑といえば、昨年行った鮑専門店「<a target="_blank" href="https://pukuo-pukupuku.com/archives/9171303.html">あわびの源太</a>」を思い起こしますが、こちらの千葉県産鮑も柔らかい噛みごたえと甘みで大変美味しいです。一緒に添えられているトリュフ、エリンギ、オマール海老の煎餅もそれぞれ美味しいのですが、<strong>何より驚いたのが肝</strong>。肝というと苦味があって、でもそれが美味しい。という経験を持っていましたが、こちらの<strong>肝は苦味はなく、うまく表現できないのですが鮑の旨みを凝縮したような味わいでした。</strong><br />

<p>お肉に合わせてご飯、味噌汁、香の物が出されます。ご飯は白米とガーリックライスが選べ、こちらはガーリックライスをチョイス。目の前で大量の油でガーリックを炒めていき、最後に余分な油を捨ててご飯と混ぜ合わせて完成。こちらも本当に香ばしい匂いで食欲が増します。<br />

<p>サーロインステーキは上質な脂がのっていて、良い和牛を食べている！という感じでした。が、<strong>最近脂っこいものが苦手になってしまったぷくおは、ちょっと脂が乗り過ぎていてフィレの方がよかったかもと少し後悔（ぷくお妻からフィレをもらいましたが、こちらも絶品でした）。</strong><br />

<p>前々から行きたいと思っていたレストランでしたが、当日行こうとすると満席で入ることができず、今回ようやく1週間前に予約して入店することが叶いました。</p>
<p>写真を見るだけでどの品も鮮明に味を思い出すことが可能な美味しさでした。お手頃とはいえませんが、メインカウンター以外でも専属シェフが目の前で調理してくれること、料理の美味しさ、LINE-INC.の勝田氏がデザイン担当した空間で食事を楽しむことができること、帝国ホテル内のレストランということを考えると、適正価格だと思います。</p>
<p>なお、今回は写真に撮っていませんが、一緒に頼んだノンアルコールワイン（赤）はブドウで作られているのになぜか濃厚なプルーンのような不思議な味わいでしたよ。</p>

<p>お店のジャンルとしては海鮮料理屋なのでしょうが、他に魚などが出てこない海鮮料理屋という、<strong>ぷくお</strong>にとって前代未聞のお店「あわびの源太」に行ってきました。</p>

ビルの地上階に入ってすぐに地下に降りる階段がありますが、そちらだと裏口？のような店舗入口に惑わされますので、奥のエレベーターから降りるのがおすすめ。</div>

全ての料理に鮑が使われる鮑三昧のコースとなっていました。 </div>

<p>本日のお通しは、鮑の酢の物、ツブ貝の酒蒸し、だし巻き卵の三品。<br />
鮑のやわらかいけどもしっかりと歯ごたえのある食感と、柔らかく味わいのあるつぶ貝が印象的でした。<br />

あわびの源太の名物である「あわびの水貝」。<br />
直前まで生きていた鮑に包丁を入れ、カットされてマンゴーのようになった鮑を、源太命のだし汁とともに味わいます。</p>
<p>柔らかい貝柱とコリコリした吸盤部分の食感と味わいを楽しみ、濃縮された海のようなだし汁を飲むとまるで海そのものを飲み干しているような味わいの料理でした。 </p>

「あわびをすりおろし、すり身にしたものを茶巾状に包んで揚げた」一品。<br />
あわびをすりおろすという所からすでに想像できない味わいですが、ふわっと柔らかく鮑の甘みが広がるタネとカリッとした皮が楽しめる上品な茶巾揚げでした。</p>

鮑の身を熟成させた鮑の肝が塗られた紫蘇で包み、バターで香ばしく焼き上げてあります。<br />
バターで甘く焼かれた鮑を肝と紫蘇が味を引き締めていて、お酒が進む料理でした。</p>

「活き鮑の上に蝦夷バフンウニを乗せ、<span style="color: #ff0000;">秘伝のタレで焼き上げた究極の料理</span>」という一品。<br />
<b>究極ってそんなおおげさな。と思いきや、本当に究極の料理でした。</b></p>
<p>
目の前に出されたお皿には、塩が敷かれていて、小石に鮑が乗っています。<br />
鮑の下には固形燃料が燃えていて、見た目にも楽しめる料理になっています。 </p>
<p>
見た目を楽しんだ後、いよいよ鮑を口に運びます。<br />
焼かれることで甘く、柔らかくなった鮑の上に、大量に盛られた濃厚なエゾバフンウニの組み合わせは、一切お互いの良さを邪魔することがなく、相互に高めあって濃厚な旨さなのにくどく無い絶品の美味しさでした。</p>

蝦夷鮑、北海道産のホタテ、厚岸産牡蠣といった様々な北海道産の貝で長時間煮込まれた濃厚スープ。<br />
臭みが全くなく、濃厚な貝の旨みが詰まった優しい塩汁でした。<br />

いよいよ最後の料理。<br />
活きた鮑をすりおろし、北海道産の長いもと合わせ「あわびとろろ」にしたものをご飯にかけ、さらに活きあわび、生うに 、海藻エキスが詰まったあわびの肝を乗せた「あわびの秀飯」。</p>
<p>
「あわびとろろ」となることで、普通のとろろご飯と比べて鮑の甘みが広がり、まろやかな味わいとなっています。</p>
<p>そのあわびとろろ飯と鮑、うに、肝が組み合わさることで海の豊かさを味わえるご飯になっていました。</p>
