										<content:encoded><![CDATA[<p>静岡県で高い人気を誇る炭火焼レストラン「さわやか」。<strong>ぷくおも知り合いから何度も「おいしかった！」という話を聞いていたので食べに行ってみたかったものの、一番東京に近い御殿場店（プレミアムアウトレット店や御殿場インター店）はいつも大混雑。</strong></p>
<p>今回、ようやく函南店という三島市近くにある函南（かんなみ）という町にあるお店に行くことができました。</p>
<h2>さわやか　函南店</h2>
<p>さわやかは静岡県内に34店舗展開している地元密着型の人気店。大半は県中央部に集まっていて、東側だと先ほどの御殿場近辺の2店舗と、三島市周辺の3店舗。</p>
<p>函南店は国道1号で箱根から三島市に向かい、東駿河湾環状道路を南に進んだところにあります。</p>

<p>営業時間は11:00〜23:00（L.O. 22時、土・日・祝・特別営業日は10:45開店）。定休日は大晦日と元旦のみとなっています。</p>
<p>訪れたのはよりによって混雑が予想される三連休最終日の15:40ごろ。</p>

<p>ランチには遅すぎるし、夕食にはさすがにまだ早い。<strong>そんな時間帯にもかかわらず受付は40組待ち（！）　案内目安は約90分後&#8230; もう夕食の時間帯に差し掛かりますね。</strong></p>
<p>店内の待機エリアはコロナ対策として間も無く呼び出しがかかる組の代表者のみ待機可能となっていました。</p>
<p>途中、一気に呼び出し番号が繰り上がるというラッキーがあったものの、<strong>入店できたのは70分近く経過し、もうお腹も限界。という頃でした。</strong><br />

<p><a target="_blank" href="https://www.genkotsu-hb.com/menu/">メニュー</a>を見ていただければ分かる通り、目玉はハンバーグなもののステーキやバーガーなども取り揃えられていました。とはいえ<strong>「さわやか」初心者のぷくお。やはり最初は看板商品の炭焼きハンバーグを堪能しよう！と思い、250gの「げんこつハンバーグ」と「ライ麦パン」をチョイス。</strong></p>
<p>炭焼きだからサーブされるのに時間がかかるかと思いきや、体感5分ほどでハンバーグが登場！</p>
<p>牛の形をした鉄板の上にはその名の通り拳骨大のハンバーグが鎮座。<br />

<p>目の前で店員さんがナイフで半分に切り、フォークで切断面を鉄板に押し付けると「ジューッ！！」という音とともに香りが漂ってきます。ソースをかけて鉄板が少し冷めるのを待っていよいよ実食。<br />

<p>いよいよ実食！と思ってハンバーグにナイフを入れ、<strong>フォークで口元に運んだ時に目に飛び込んできたのがこの鮮やかな<span style="color: #ff6600;">生っぽい肉。</span></strong><br />

<p><strong>思わず店員さんに「この状態で大丈夫ですか？」と聞いてしまったのですが、店員さんによると牛肉を一番美味しく楽しんでもらうための火加減にしているとのお返事をいただきます。</strong></p>
<p><span style="font-size: 14pt;"><strong>そうか、これがベストの状態なのか。と思って口に入れると<span style="color: #0000ff;">ひんやり</span>した食感。</strong></span></p>
<p>牛肉100%を存分に味わえたのですが、<strong>ちょっと怖かったのでまだ鉄板が熱いうちに残りのハンバーグを切り分けて少しでも火が通るよう鉄板の上にハンバーグを並べました(笑)</strong></p>
<p>それでも所々赤みが残るハンバーグでしたが、確かにごろっとした粗挽きの牛肉はお肉を食べている！という満足感を味わえる美味しさでした。</p>
<p>また、<strong>文句なしに美味しかったのがライ麦パン。なんと温かい状態で提供され、ふんわりとちぎれるパンにマーガリンをつけて食べるのは幸せでした。</strong></p>
<p>他のテーブルからはハンバーグを半分に切って加熱する際に盛大な煙が出ていたので、<strong>もしかしたらたまたま少し温度の低い鉄板だったのかもしれませんし、今のところお腹が痛くなっていないので気にしすぎだったのかもしれません。<span style="color: #ff6600;">が、生肉が苦手な人もいると思うので好き嫌いの分かれるお店だと思います。</span></strong></p>
<p>今度はもう少し人が落ち着いている時に再訪してみたいですね。<br />

										<content:encoded><![CDATA[<p>アメリカ・ニューヨークに行った際に訪れたのが、Peter Luger Steak House（ピータールーガー・ステーキハウス）という名店中の名店と言われるステーキハウス（日本にも出店しているウルフギャングのオーナーなども務めていたお店）。</p>
<p>ここのステーキを食べて以降、日本で美味しいと言われている霜降り肉ではなく、赤身肉の美味しさに取り憑かれてしまいました。</p>

<p>そんな中、コストコに行くたびにいつも気になっていたのが牛肉コーナー。</p>
<p>コストコの精肉コーナーには、美味しそうなサシの入った和牛も売られていますが、当然ながらアメリカから輸入された牛肉も売られています。</p>
<h2>購入したお肉について</h2>
<p>コストコの牛肉には大きく分けて４つの格付けがされています。</p>
<p>上から順に</p>

<p>今回初めて購入したのは、上から２つ目の<strong>チョイスグレードのヒレステーキ。</strong></p>
<p>せっかくならプライムのステーキを食べたかったのですが、残念ながら売られていなかったのでチョイスを選択。</p>

<h2>調理開始</h2>
<p>チョイスグレードとはいえ、きっと旨味のあるお肉だろうと想像し、<strong>塩は焼く直前に振る</strong>ことに決定（普通は30分ぐらい前に塩を振ると余計な水分が抜けて美味しさUP）。</p>
<p>お肉の厚みが3cmほどありそうなので、まずは焼く<strong>１時間ほど前に冷蔵庫から出し、常温に戻しておきます。</strong></p>

<p><strong>とにかくじんわりと火が通ることをイメージしながら、ムラができないように向きを変えたりしました。</strong></p>

<p>念の為、料理用温度計でお肉の温度を測ってみると70度と表示されたので、滅菌目安の63度を超え、目標としていたミディアムレアに近づいたと判断し、最後に胡椒を振ってからフライパンからお肉を下ろします（最後に胡椒をかけた方が焦げずに風味が生きる）。<br />

<p>肝心の味ですが、お肉らしい赤身の旨味が凝縮されているのにふんわり柔らかい、今までに食べたことのないような食感のお肉でした。</p>
<p>写真ではソースがかかっていませんが、市販のステーキソース、塩、ポン酢と様々な調味料で味の変化を楽しみながら完食。</p>
<p>ここまで厚いお肉を焼いたのは初めてでしたが、とにかく<strong>低温調理を行なっているように弱火で時間をかけて火を通していけばうまく焼ける</strong>というのが分かりました。</p>

<div>今回食したのは宴コースなので、前菜・ローストビーフ握り寿司・お造り盛り合わせ・替り鉢・特上すき焼・お食事・季節の果物と進んでいきます。</div>

<div>お野菜にはオクラやナスと言った、夏を感じさせるものも。</div>

今半さんでは季節に応じて2〜3種類の野菜が変わるそうです。</p>

<div>割り下を入れたあと、まずはお肉だけ火を通していきます。</div>

<div>こちらのお肉は唇だけで噛みきれそうなほど柔らかく、溶けるような食感でした。味はもちろん牛肉ですが、肉であって肉ではないようなお肉でした。</div>
