<p>先日の三連休でコストコにマフィンを買いに行ったらまた販売されていたので買ってしまいました。</p>


<p>今回の目標は今までと異なる焼き方。今までは焼き目をつけた後は30秒おきに表裏を替えてじんわり中に火を通すという焼き方をしていたのですが、これがそのやり方で焼いたステーキ。</p>

<p>で、こちらがニューヨークのステーキの名店であるピーター・ルーガーで食べた時のステーキ。</p>

<p>さらにこちらがウルフギャングで食べたステーキ。</p>

<p>どちらも表面がもっとカリッと。中はもっとレアに仕上がっています。</p>


<p>前回焼いたステーキも美味しかったのですが、これらの名店に比べるとなんか凡庸な味わいに感じられてしまいました。</p>


<p>とはいえ、ピーター・ルーガーなどでは厳選した牛肉をドライエイジし、さらに900℃のオーブンで焼き上げています。</p>


<p>ガスの炎が200〜250℃。炭火の表面温度が300〜600℃、うちわで煽いでようやく1,000℃ということで、家庭でステーキが焼けるまでの間ずっとうちわで炭を煽がない限り実現不可能。</p>


<p>ではありますが、あの食感を自宅でも再現したい。と思っていたところ、料理雑誌のdancyuを読んでいたところ、駒沢に店を構えるイタリアン「イル・ジョット」の高橋シェフによる極厚ステーキの焼き方が紹介されていました。</p>


<p>その焼き方は次の通り。</p>


<ul class="wp-block-list">
	<li>厚い肉を買う</li>


	<li>肉は常温に戻さない(内部が冷たい方が表面と内部の焼き色に差が出て美しいグラデーションになる)</li>


	<li>肉の両面にたっぷりの塩を振る</li>


	<li>米油、非焙煎の胡麻油またはサラダ油をフライパンの底一面を覆うぐらい入れ、強火にかける</li>


	<li>肉を入れたら、肉とフライパンの底の間に油を入れるイメージで肉表面に強い焼き目を均等に入れていく</li>


	<li>3分程度焼いて強い焼き色が付いたら反対側も同様に焼く</li>


	<li>網を敷いたバットなどに引き上げ、コンロ周りなどの暖かい場所で10分ほど肉を休ませる</li>


	<li>油を入れ替え、今度は中火で10秒ごとに表裏を入れ替えて計2分ほど焼き、再びバットの上へ</li>


	<li>金串を肉に刺し、人肌程度の温かさであればそのまま。人肌より冷たければ火を止めたフライパンに戻し、余熱で両面を30秒〜1分ずつ温めてから10〜15分休ませる</li>


	<li>再度金串で肉の中心が人肌より温かいことを確認したら、仕上げに弱火のフライパンで両面を加熱し、皿に盛り付けてからE.X.オリーブオイル、塩胡椒をして、付け合わせを添えて完成</li>
</ul>


<p>ステーキというと牛脂で焼き上げるイメージがあったので、米油などの油で焼き上げるというのがかなり新鮮。でも雑誌に紹介されていたステーキは美味しそうな焼き色が付いていたので今回はこれに倣って焼いてみることに。</p>


<p>まだ冷たい感触のステーキに、自分的にはこれでもかというぐらい塩をまぶします。この時点で罪悪感が出てきます(笑)が、ほとんどの塩は油と共に流れ去ると信じてたっぷりまぶしました。</p>


<p>続いてフライパンに油を入れるのですが、つい癖でオリーブオイルを投入。しかも底に数ミリ溜まるぐらいのオイルを投入してしまいました。</p>


<p>油が温まったところでステーキを投入。ジュー！！という音が食欲をそそります。</p>

<p>とにかく油が跳ねまくるので、常にフライパンの上には油はね防止の金網をセットしていました。</p>



<p>適度な網が見当たらなかった(今考えればReDeポットに付いていた底網を使えば良かった)ので、コンロの近くに大きなお皿を置き、その上でお肉を休ませました。</p>


<p>たった１回で捨てられるオリーブオイルがもったいないと思いつつ、油を入れ替えて再度焼いていきます。</p>


<p>仕上げのたっぷりとしたお肉の休憩と、弱火の再加熱を忘れてしまいましたが、こんな感じでいい焼き色のステーキが完成！</p>

<p>恐る恐るナイフを入れると、前回よりもグラデーションのはっきりした断面が登場です。</p>

<p>お肉の味自体は当然前回のものと一緒ですが、表面の焼きの違いでより美味しく感じます。妻も前回より今回の焼き方の方が美味しいと好評でした。</p>

										<content:encoded><![CDATA[<p>年末に届いた3匹の伊勢海老。色々と予定が立て込んでいたので、生きている伊勢海老をちょっと勿体無いとは思いつつも、氷の浮かんだ冷水で締めてから濡れた新聞紙と3重のサランラップでぐるぐる巻きにして家庭用冷蔵庫の急速冷凍室で冷凍保存していました。</p>
<p>掃除と年賀状で追われた年末が過ぎ去り、少し平穏となった新年になったので伊勢海老さんを食べることに。</p>
<p>まずは冷凍した伊勢海老を解凍する必要があるのですが、調べてみると<strong>伊勢海老は冷蔵庫内でゆっくり解凍すると味は変わらないものの、色が黒く変色することがあるので流水解凍するのが正しいのだそう。</strong></p>
<p>凍えるほど冷たい凍った新聞紙を取り外し、バットの中に伊勢海老を並べて水で急速解凍していきます。こちらがだいぶ解凍が進んだ伊勢海老ですが、こうしてみるとまるで生きているかのよう。</p>

<p>およそ30分弱で解凍が終わり、いよいよ伊勢海老の調理を進めていきます。今回は伊勢海老本来の味わいを楽しみたいということで、海老を縦に半分にし、鉄板焼きを行いたいと思います。</p>

<p>硬い殻に覆われている伊勢海老を半分にするのがまず最大の難関。本来は怪我防止のために尖った部分を先にキッチンバサミで切り落としておき、さらに軍手をはめて作業を行うのがセオリーのようですが、ついついそれら作業を忘れて素手で進めた結果、指3本に軽い負傷を負いました（汗</p>
<p>まず包丁で伊勢海老に挑んでみますが、三徳包丁ではびくともしません。実はキッチンバサミで行った方がはるかにやりやすいという話を聞き、まずは胴体の背中（上）側にハサミを入れ、ジョキジョキと殻を切っていきます。</p>

<p>尻尾の節目が特に硬くて苦労しましたが、殻を縦方向に一周切ることができたので、続いて殻の間から包丁を入れ、身を半分にすることに成功。</p>

<p>あとはシェフの教えの通り、内臓を取り除き、一度冷凍したので尻尾の身を指で殻からある程度引き剥がし、味噌の部分を別皿に移し、鉄板へgo。とはいえ当然家には動画のような鉄板はないので、鉄でできたタークフライパンで代用します。</p>

<p>シェフの教えでは、海老味噌はバターと白ワインで味付けするとのことでしたので、去年買っていた日本人初のボルドー女性醸造家が手掛けるワイン「シャトー ジンコ」のボルドー白ワインの銘醸地グラーヴにあるワイナリーと提携し、百合草氏の完全監修によって造られるバリューワイン「ジー・バイ・ユリグサ ブラン」を開封。</p>
<p>伊勢海老は3切れをタークフライパンで教えの通り。残り3切れは魚焼きグリルで焼きましたが、魚焼きグリルだと直火になるため殻が劣化してしまうので、鉄板焼きで食べる方が美味しくできました。</p>

<p>いい白ワインで味付けした味噌は濃厚な甘さで、伊勢海老の肉厚のぷりぷりした身と相性抜群。また初めて飲んだジーバイユリグサは、少し辛口の柑橘系の味わいだったので、甘い伊勢海老とセットだとこれもまた清々しい美味しさでかなり美味しかったです。</p>
<p>さらに、写真には撮っていませんがメインのすき焼きとセットにしたのがカリフォルニアのDRCという噂のCALERA社の広域ブドウワイン「カレラ ピノノワール セントラル コースト」。</p>

<p>これもセールの時に2本購入していたのですが、開栓後１時間近く経ってからベリー系の芳醇な香りが湧き上がってきて、1年ほど前に飲んだD.R.Cのラターシュを彷彿とさせてくれます。</p>

<p>ちょっと脱線しましたが、伊勢海老、すき焼き、ジーバイユリグサブラン、カレラ セントラルコーストと、華やかなスタートとなりました。</p>

<p>フライパン類が積み重なっているので、毎回目的の物を取り出すには上のものをずらして取っていて、前々から収納スタンドがあれば便利なのかもなと感じていました。</p>
<p>そんな中、ようやく購入したのがこちらのBelcaのキッチン収納。</p>

<p>今更ながらに気づいたのですが、幅29〜55cmのスタンダードと幅45.2〜87.2cmのワイドタイプの2サイズがあり、さらにそれぞれに仕切りが垂直のみのノーマルと大きなフライパン向けに斜めざしができる2WAYの2種類が設定され、計4モデルが販売されています。</p>

<p>まずは収納場所に仮置きして幅を調整してから、仕切りとなる金具をフライパンや鍋の幅に合わせて差し込んでいくだけ。</p>
<p>残念ながらスタンダード幅では収納場所の幅一杯にはなりませんでしたが、概ねカバーできたので良しとします。</p>
<p>ものの15分ほどであの乱雑だった収納はこの通りすっきり！！</p>

<p>当然ですが出し入れもかつてないほどにスムーズで、なんでもっと前に買っておかなかったんだろうと若干後悔しています。</p>
<p>なお、漢のフライパンであるタークフライパンは、その特徴でもある長い柄が邪魔になって30cmはもちろん24cmも入らなかったので、こういった特殊なフライパンを持っている方は別場所の方法が必要なのでご注意ください。</p>

										<content:encoded><![CDATA[<p>アメリカ・ニューヨークに行った際に訪れたのが、Peter Luger Steak House（ピータールーガー・ステーキハウス）という名店中の名店と言われるステーキハウス（日本にも出店しているウルフギャングのオーナーなども務めていたお店）。</p>
<p>ここのステーキを食べて以降、日本で美味しいと言われている霜降り肉ではなく、赤身肉の美味しさに取り憑かれてしまいました。</p>

<p>そんな中、コストコに行くたびにいつも気になっていたのが牛肉コーナー。</p>
<p>コストコの精肉コーナーには、美味しそうなサシの入った和牛も売られていますが、当然ながらアメリカから輸入された牛肉も売られています。</p>
<h2>購入したお肉について</h2>
<p>コストコの牛肉には大きく分けて４つの格付けがされています。</p>
<p>上から順に</p>
<ol>
<li>PRIME（プライム）</li>
<li>CHOICE（チョイス）</li>
<li>Select（セレクト）</li>
<li>Standard（スタンダード）</li>
</ol>
<p>となっています。</p>
<p>今回初めて購入したのは、上から２つ目の<strong>チョイスグレードのヒレステーキ。</strong></p>
<p>せっかくならプライムのステーキを食べたかったのですが、残念ながら売られていなかったのでチョイスを選択。</p>
<p>正味量812gで３枚のお肉が入って税込6,480円というお値段でした。<br />

<h2>調理開始</h2>
<p>チョイスグレードとはいえ、きっと旨味のあるお肉だろうと想像し、<strong>塩は焼く直前に振る</strong>ことに決定（普通は30分ぐらい前に塩を振ると余計な水分が抜けて美味しさUP）。</p>
<p>お肉の厚みが3cmほどありそうなので、まずは焼く<strong>１時間ほど前に冷蔵庫から出し、常温に戻しておきます。</strong></p>

<p>焼き色がついたらひっくり返し、お肉の中にじんわりと火を通していきます。<br />

<p><strong>とにかくじんわりと火が通ることをイメージしながら、ムラができないように向きを変えたりしました。</strong></p>

<p>念の為、料理用温度計でお肉の温度を測ってみると70度と表示されたので、滅菌目安の63度を超え、目標としていたミディアムレアに近づいたと判断し、最後に胡椒を振ってからフライパンからお肉を下ろします（最後に胡椒をかけた方が焦げずに風味が生きる）。<br />

<p>こちらが焼きあがったお肉。<br />

<p>お肉の断面は狙っていた通りのミディアムレア。<br />
こちらは厚い方のお肉で、気持ち薄い方のお肉は<strong>ぷくお妻</strong>の好きなミディアムあたりの火の通り方となっていました。<br />

<p>肝心の味ですが、お肉らしい赤身の旨味が凝縮されているのにふんわり柔らかい、今までに食べたことのないような食感のお肉でした。</p>
<p>写真ではソースがかかっていませんが、市販のステーキソース、塩、ポン酢と様々な調味料で味の変化を楽しみながら完食。</p>
<p>ここまで厚いお肉を焼いたのは初めてでしたが、とにかく<strong>低温調理を行なっているように弱火で時間をかけて火を通していけばうまく焼ける</strong>というのが分かりました。</p>
<p>今度はヒレではなく、サーロインステーキも味わってみたいと思います。</p>
